Disodium Pyrophosphate or Sodium Acid Pyrophosphate is a buffering and chelating agent used in canned seafood, as a scald agent in poultry and pork, as a sequesterant in potato products, and is used to aid leavening in baked goods. In leather treatment sodium acid pyrophosphate can be used to remove iron stains on hides during processing. It can stabilize hydrogen peroxide solutions against oxidation. It can be used for cleaning with sulphamic acid in some dairy applications. In Petroleum production, it can be used as a dispersant in oil well drilling muds. Dihydrogen disodium pyrophosphate sodium acid pyrophosphate is also found in browns (frozen) to keep the color of the potatoes from fading. Packing: 50 lb or 25 kg net carton or bag with an inner P/E liner bag.
  • Description: Disodium Pyrophosphate 28 (SAPP 28) is an aerator grade of sodium acid pyrophosphate for bakery applications with a slow Rate of Reaction.

Applications: Disodium Pyrophosphate 28 (sodium acid pyrophosphate) is used as a slow reacting aerator acidulant in conjunction with sodium bicarbonate.

  • Sodium acid pyrophosphate has a rate of reaction of 26 - 30% CO2 in 8 minutes.
  • Sodium Pyrophosphate is a crystalline acid salt Na2H2P2O7 of pyrophosphoric acid that has been added to hot dogs to give them color -called also sodium acid pyrophosphate source:merriem-webster-online.

Usage: Pure zinc phosphate is widely used in various coating materials for preparation of waterproof, acid-resistant or corrosion preventive coating materials such as phenolic paint, epoxy paint, acrylic paint, paste paint and water-soluble resin paint in the fields of shipbuilding, automobile, industrial machinery, light metal, household appliances and metal containers for foods.

The most commonly applied paint pretreatment for developing good bonding qualities between paint and the galvanized or galvannealed coatings on steel sheet is zinc phosphate. In addition to the excellent effect that a zinc phosphate coating has on paint adhesion, it also aids to decrease, often dramatically, the tendency for paint disbondment during subsequent atmospheric exposure in a corrosive environment. Zinc phosphate coatings can be applied to the galvanized sheet while it is in coil form by either the steel manufacturer or a coil coater (manufacturer of prepainted sheet), or it can be applied to the cut sheet or fabricated article by the end-use manufacturer. The usual zinc phosphate process involves several steps, both if the coating is applied on a coil line or by the part manufacturer. If there are oils present on the surface of the galvanized or galvannealed steel, the first step is the removal of the oil by degreasing. This might involve cleaning with the use of an aqueous, alkaline cleaning solution or by other forms of degreasing with the use of solvents. Preferably, if the phosphating is done on a coilprocessing line, the next step involves the use of a conditioning stage; the application of a titanium phosphate conditioner to prepare the galvanized/galvannealed surface for the development of a superior zinc phosphate coating. The titanium phosphate aids in the development of a uniform phosphate coating with small zinc phosphate crystals by depositing sub-micron size particles which act as seeds to promote the growth of zinc phosphate crystals on the surface of the galvanized sheet.

Sodium aluminium phosphate is a leavening acid commonly found in baked goods. It has a neutralizing value of 100 and is slow reacting.

Function

SALP is relatively unreactive at room temperature, releasing the majority of gas production at baking temperatures. This makes it ideal for self-rising flours, prepared baking mixes, and refrigerated doughs/batters that need to be stable for long periods of time. SALP has a bland flavor in baked goods and increases the dough’s tolerance to ingredient and flour variability. SALP is high in sodium.

Application

SALP should be used in conjunction with baking soda. The neutralizing value of leavening acids is the ratio of sodium bicarbonate (baking soda) to 100 parts of acid leavener that will bring about complete carbon dioxide release or “neutralization.” For an acid with a neutralizing value of 100, if complete neutralization is desired, you would start out with equal parts SALP to baking soda. Adjusting the amount of leavening acid to baking soda can raise (decrease acid amount) or lower (increase the acid amount) the pH of the finished product, if desired.
